Susannah Faulkner, a junior politics major and SGA senator at Ithaca College, is working hard to improve celiac disease awareness on campus. As a result of her efforts, students at Ithaca College have some safe gluten-free dining options. Below is a quote from the article she wrote in The Ithacan newspaper.
"Starting this past week, the Campus Center Dining Hall installed a 'gluten-free pantry,' which includes main gluten-free staples such as bread, wraps, pasta, bagels and cereal. Also, there is a toaster and a microwave exclusively for gluten-free products along with individually portioned peanut butter, jelly, cream cheese and butter."
She also intends to start a club on campus for students with special dietary needs.

I'm so happy that the colleges are recognizing the need for gluten-free options. I'd like to say that I have only recently started having reactions to gluten and dairy products; however, being that allergic reactions can manifest in so many different ways.....I'm sure I've been aggravating my body longer than I think.
I'll be happy when fast food restaurants implement these ideas. Or, is fast food and healthier eating an oxymoron? :)

As Susannah's mom, we have had the long road of diagnosis and trial and error of diet. It started when she was quite young. She has matured into a healthy life-style and is a great model for those with celiac (AND dairy allergies!); life does go on and can be active and quite good.
Needless to say, I am proud of her accomplishments at Ithaca.
